Restaurants are one of my greatest sources of inspiration for blog recipes. I love to see what chefs are creating out there, especially in the realm of health and wellness, and am often inspired to try a home version. That’s exactly what happened with this lemon ginger beet juice. There’s a local juice bar here in Oxford called Juva, where my husband and I like to go when we need a little pick-me-up. Our favorite drink on the menu is their beet juice. It’s insanely good, with just the right hints of ginger and lemon to balance out the beet and apple flavors. I knew as soon as I tasted it I had to learn how to make it.
So I set out to find a way to re-create this recipe at home, albeit without a juice maker. Turns out you don’t need one for really great tasting juice! Now I’m excited to try more juice recipes at home.

This beet juice can be made in 10 minutes from start to finish and you only need 5 ingredients: apples, beet, carrot, ginger and lemon (all fresh and raw). That’s it!
My husband and I love to drink this juice in the morning to start our day or as a pre-workout beverage. Beets contain high amounts of nitrate (not to be confused with the cancer-causing sodium nitrite added to cured meats), which is converted to nitric oxide. Nitric oxide helps to thin the blood and widen blood vessels. Both of these outcomes are important for cardiovascular health and exercise performance.
There’s no need to take a pre-workout supplement full of artificial additives if you can have the real, fresh, nature-made stuff, amiright? Trust me, your body will thank you for this delicious nectar from the earth.
- 1 beet
- 2 red, sweet apples
- 1 carrot
- juice of 1 lemon (if you don't want much tartness, use ½ lemon)
- 1-inch fresh ginger
- 1½ cups water
- Wash and scrub vegetables. I also peeled the ginger and beet skins to prevent dirt getting into the mix.
- Roughly chop vegetables into 2-inch sections so they will fit into a blender.
- Add all ingredients to a blender and blend on high until very small pieces are formed.
- To strain, put a cheesecloth over a funnel and place in a glass container where you will store or drink your juice.
- Pour the beet mix into the cheesecloth/funnel and squeeze the juice out using your hands.
- Discard the roughage into a compost bin or trash can.
- Drink juice immediately or store in the refrigerator for up to 14 days.
